The Carob tree is native to the Mediterranean basin ans as a plant it can survive long periods of drought and can live for hundreds of years. In Days of old, its seeds were used as a unit of measurement because it was assumed that each seed had the weight of 1 carat. Its fruit, encased in pods, may be powdered and used as a chocolate substitute or better still serve as basis of this traditional Maltese liqueur. May be served chilled on its own as a digestiv or added to cakes and desserts for a more intense flavour.
