Riviera Ligure Olio Extra Vergine DOP is produced in small batches in the harsh, dry fields of Liguria in north-west Italy where the Taggisaca olives are grown. The precious olives that produce this oil are harvested by hand in the old, traditional way, then selected and immediately taken to the mill to be ground. This ensures optimum preservation of the high quality of the fruit and all its genuine goodness. This rich olive oil is a delicate oil with a decidedly sweet feel, mildly fruity and with a characteristic aftertaste of almond and artichoke. with a light and delicate fruitiness. It is yellow in colour with green hues.
It is recommended for fish-based recipes and as a dressing in general. This is because of its special gift of not masking other flavours but harmoniously enhancing them to give every dish a different, indeed unique taste.
