Raspinotto Cotechino

Description

Cotechino knows it origins way back at the end of the 18th century in Piedmont. The cotechino by Raspini Salumi is a product made with select pork from approved Piedmontese farms and subsequently processed according to the rules of the Piedmontese tradition.

Cotechino with lentils is a typical dish on the Christmas menu and especially on New Year’s Eve tradition has it that eating a portion of cotechino before midnight is a good omen for the New Year.
The difference between cotechino to its counter-part, zampone, is that cotechino is stuffed in a natural pork casing, while the zampone, as the name says, is stuffed in the trotter of the pork.
